Another one of our favorites! Pork Chops & Garlicky New Potatoes
Pork Chops & Garlicky New Potatoes
2 lean pork chops, 1 inch thick
1 medium onion, cut in half and sliced thin
4 medium sized new potatoes, cut in quarters and then in 1 inch cubes
2 tablespoons olive oil
salt & pepper
3 Tablespoons minced dried garlic
1 cup red wine
Trim excess fat from chops, salt and pepper to taste and brown on each side in the olive oil.
Place the onions on top of the chops and cover with lid.
Cook for about 30 minutes on medium and then add the new potato chunks around the chops.
Sprinkle the minced dried garlic on the potatoes and add salt as desired. Cover and Cook for 20 minutes.
When potatoes are nearly done, stir them and then pour the cup of wine over the chops.
Cover again and cook for 15 more minutes on medium heat.
